Happy Halloween!

We are suited up and ready to trick or treat!

I've found the perfect "dinner on the go" for Mr. Hausfrau while he chaperones our little werewolf and princess this year:  nicoise salad in a bun!  I can't think of anything nicer.





Tuna Nicoise Sandwich  (source)

Ingredients:

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons white-wine vinegar
  • 1 tablespoon Dijon mustard
  • Coarse salt and ground pepper
  • 2 cans oil-packed tuna (6 ounces each), drained
  • 1/4 English cucumber
  • 1/2 small red onion
  • 1 8-inch round loaf country-style bread
  • 3 tablespoons jarred olive tapenade
  • 1 cup fresh basil leaves
  • 2 large eggs, hard-cooked and sliced


Directions:

  1. In a medium bowl, whisk together oil, vinegar, and mustard; season with salt and pepper. Transfer 2 tablespoons dressing to another bowl; toss with tuna. To remaining dressing, add cucumber and onion; toss to combine.
  2. Cut bread in half horizontally; remove most of soft interior crumb. Spread tapenade on bottom half. Top with basil leaves, then egg slices; season with salt and pepper. Top with tuna, then cucumber mixture; close sandwich.
  3. Wrap sandwich tightly in plastic and place between two baking sheets. Weight with a heavy skillet. Let stand 1 hour (or refrigerate, up to overnight). To serve, cut into quarters.

  2. This sounds delicious! I will have to try it. I eat vegetarian but recently discovered how to make fake tuna with chickpeas. The kids look adorable. :)

    1. Thanks! Our halloween was great: lots of trick or treaters (over 160 kids!) and ours are swimming in loot too. Time to cull...

    1. I'd managed to get some chilli and rice into the kids before they went out, but Mr. Hausfrau got in from work seconds before the kids were set to trick or treat. So he was happy for something to eat while trolling with the kids!

  6. Thant sandwich reminds me russian pirogies... it is call staffed bread or pirozhki! Yummy!

    I hope your Halloween as fun! We had a horrible storm this year with freezing rain and high winds. I did get a thrill seeing my granddaughter all dressed up this year though. Now we prepare for the craziness of the coming holiday season!

    1. I bet your granddaughter was a cutie! The storm was likely an appropriate backdrop for the spooky night, but not the best to troll for candy in!

  9. I love the Creeper pumpkin! I did one myself the past two Halloweens, but this year we tried something different :3 Their costumes looked fantastic, hope you all had a great holiday :)

    1. So cool that you recognize the Creeper, Karolina! My husband was in charge of carving and coming up with do-able patterns. Oliver had picked out all sorts of intricate ones (not fully realizing how long these creations take) so really it is to Mr. Hausfrau's credit that he convinced O to do the least difficult one! It does have a great effect though, I agree!
